Amoterra means to ‘love the land’, this is the vineyards ethos. The harvesting period of the Trebbiano starts from the second week of September. As soon as the grapes arrive in the cellar they are crushed and de-stemmed, then softly pressed. Cold maceration for 24 hours at 8 degrees. Fermentation takes place at a controlled temperature in stainless steel for about 10-15 days.

Álvaro Domecq 1730 Palo Cortado VORS
Regular price £65.00Palo cortado is a special type of sherry that starts its life and maturation under protective flor, destined to become a fino or amontillado. Partway through the maturation it loses its veil of flor and begins oxidative ageing as an oloroso sherry would.
This combined maturation results in a wine with some of the richness of oloroso and some of the freshness of amontillado. It is a rare beverage though as just 1 to 2% of the grapes pressed for sherry naturally develop into palo cortado.
A very full-flavoured sherry with fruit intensity and concentration on the nose and palate. Lots of dried fruit with light toffee sweetness and oak caramel. Delicious!

The grapes come from different locations on the island: La Geria, Masdache, and an estate located in Tisalaya. This wine is meant to reflect the island, its diverse landscapes, and the work of the different vine growers on their small plots, with vines from 10 to over 100 years old utilised.
A variety of production methods were used here, from direct pressing to maceration with skins, depending on the state of the grapes (health and ripeness). Some batches, after temperature controlled alcoholic fermentation with natural yeasts, underwent malolactic fermentation. Ageing is in stainless steel, resting for 10 months on lees, and bottles without filtration.

closed, the 2021 shows gorgeous depth and a touch more palate presence than is
typically the case for this bottling. Dark and enveloping, the 2021 will offer a number
of years of very fine drinking. It is an impressive, classy wine from Produttori del
Barbaresco.
