The Szent Tamás winery was founded by two Hungarian businessmen and the son of Hungary's most famous and influential producers- Istevan Szepsy. They firmly believe the village of MÁD in the remote Tokaj region of Hungary is one of the great wine producing areas of the world. Working with vineyards that were shaped by several volcanic eruptions millions of years ago, their goal is to ensure that the once world renowned Tokaj Crus of MÁD would capture wine world`s attention again. Currently are working with 15 hectares of old vines in 9 different Crus, the MÁD Dry Furmint was created to be a benchmark representation of the village of MÁD through the collaborative work of the Szent Tamás winery and an ever growing number of small landowners.

The Furmint grapes are hand-harvested from 20-year-old vines. The grapes are pressed and transferred to stainless steel for fermentation. Post fermentation 50% of Tornai's Premium Furmint is aged in 500 L Hungarian oak, on the lees, for 3 months, and 50% remains stainless steel. After which the two wines are blended and given time to harmonize and settle before bottling.

Tokaji wines have enjoyed a long, glorious history. Louis XIV of France described them as “The wine of Kings and King of wines”, whilst Catherine the Great of Russia stationed a contingent of Cossack soldiers in the region to protect the vineyards and escort the wine on its journey to St. Petersburg. Many European monarchs are known to have enjoyed Tokaji wines over the centuries. Napoleon III ordered 30–40 barrels of Tokaji for the Imperial Court each year, while Emperor Franz Joseph sent Queen Victoria a gift of Tokaji every year on her birthday - a dozen bottles for each year of her age.
