Here, careful vineyard management ensures the Viognier vines produce healthy grapes picked at perfect ripeness. Domaine de Vedilhan, owned by the Fayet family, lies in the village of Moussan near Narbonne. A unique feature of the estate is the brook that encircles it, providing vital water in the region’s hot climate and helping preserve the wine’s freshness and vibrancy. The soils—a blend of limestone, sand, and marine shale—encourage the vines to root deeply, resulting in grapes of exceptional quality. For Serica, the grapes are harvested at optimal ripeness, with two-thirds fermented in seasoned French oak barrels to add subtle texture and depth. The name “Serica,” derived from the Latin word for silk, reflects the wine’s elegant character.
