In 1994, Sylvie and Yann Jestin acquired the vineyards of Château Vari, a property in the Monbazillac appellation noted for producing fantastic sweet wines. They converted their 24 hectares of vineyard to organic viticulture, gaining certification in 2009, from which they produce both still and sweet wines by minimal intervention practices and with low sulphite additions.
