This wine from North Macedonia is a fresh style of Pinot Noir fermented in steel
at controlled temperatures to preserve the delicate fruits of the variety. pale ruby
red in colour with a soft nose of redcurrants and red cherries. The palate is very
smooth with a core of red fruit flavours and sweet spices supported by supple
tannins giving structure to wine. The finish is long and smooth with the red
cherry and raspberry notes lingering on the palate.
Macedonia has a rich winemaking history, with the oldest archeological findings
dating back to 13 century b.c. Today, Macedonia has around 24,000 ha of
vineyards, the two main varieties grown are Vranec (red) and Smederevka
(white). International grape varieties are being increasingly planted such as;
Merlot, Cabernet Sauvignon, and Pinot Noir from the red and Chardonnay,
Riesling, and Sauvignon Blanc from the white varieties.

At an altitude of 960 meters above sea level, with winter snowfalls often covering the vineyards, a truly continental climate facilitates gradual ripening for a concentrated, luscious, elegant, ‘terroir’ driven wine which, as the vines mature, produces increasingly perfumed wines with each successive vintage. Carefully handpicked in Ceres in the early hours of the morning, the grapes are vinified by Cellar Master Charles Hopkins in the safety of the cellar at De Grendel.

Reg Holder started his career with vintages in France, Australia and the USA before
returning to South Africa. He then spent 11 years as the winemaker at both Neil Ellis and
Delheim.
In 2015, while his wife was pregnant with their first child, he started experimenting with
de-alcoholised wine for her. When they were expecting their second, in 2017, Reg decided
that he was going to move full time into the Lautus de-alcoholised project.
He uses a state of the art piece of machinery that combines centrifugal force and a
vacuum in order to extract the alcohol while leaving the wines' volatile flavour and
aromatic essence intact.
Unquestionably the best de-alcoholised red wine we have tried!

Dornier is a family owned winery that is situated in the Golden Triangle area of the
famous Upper Blaauwklippen Valley in Stellenbosch - their prestigious neighbours are
De Trafford, Keermont and Waterford, so they are in fine company.
The property was home to one of the first wineries in Stellenbosch, having been
completed in the late 1600s, as well as an historic Sir Herbert Baker home.
The winemaking philosophy at Dornier is to produce premium quality wines, with minimal
intervention in the winery, that are expressive of the unique terroir of the Golden Triangle

Regular price £20.95A Rhône Valley style shows wonderful black fruit perfumes of super-ripe black-cherry with background hints of pretty white-flower jasmine. Fine French oak contributes with gentle vanilla and cinnamon spice. The palate is plush and velvety – the shiraz 95% shows as blackcurrant with dark berry richness and cassis adding a dense yet satiny gloss. Viognier 5% is about opulence with luxuriant polished softness with extra elements of flower and spice. Co-fermenting has gifted an extra degree of lift and length to the palate, combining the flavours for a great young drinking style.
