‘Wild Yeast Fermentation’ refers to the practice of letting the naturally occurring yeast in the environment to run the fermentation (rather than using cultured yeasts). Although wild yeast fermentations require closer care and attention by the winemaker, the results are a more complex and interesting wine.

Wonderfully rich and fleshy Chenin from hand harvested bush vine grown grapes in Paarl. Wild Yeast fermented and zero intervention this wine develops in the glass. We suggest not to over chill this wine and, if you can resist finishing the bottle, definitely give this a try on the second day of opening for an ethereal experience!

David Trafford is one of South Africa’s most individual winemakers. David is completely self-taught, save for a few months working a vintage in St Emilion. By trade he is an architect but in 1983 he decided to plant a small vineyard for fun. In 1991 David turned his part-time hobby into a full-time career. More than twenty years on, he is one of South Africa’s most decorated winemakers.

The nose is clean, fresh and inviting with its green apple, white peach and yellow plum aromas, with whiffs of angelica and lemon zest. The mid-palate shows an array of stone fruit with flavours of nectarine, pear, cling peach and tangerine creating complexity. The acidity is integrated, and the wine is medium-bodied, fleshy and smooth with slight spicy undertones from careful oaking. The finish is vibrant and refreshing with hints of bruised apple, tarragon and honeysuckle.

The grapes are sorted, de-stemmed and crushed. Fermentation process started with juice still on the grape skins, whereafter the wine was left on the grape skins for a further 6 months. The clear wine was then racked, blended and bottled.

This Chenin Blanc is pale straw in colour with sumptuous aromas of peach and melon. These characteristics are echoed on the palate, where they are perfectly balanced with a zingy lime freshness and crisp, refreshing finish.

Flavours of lemon, yellow apple and nectarine follow through onto an elegant, balanced palate with delicate notes of greengage, papaya, yellow apple and passion fruit. The wine is light to medium bodied, with a smooth, fleshy texture and vibrant, integrated acidity. Lime zest, green apple and lemongrass linger on a clean, refreshing finish with hints of orange blossom, ginger and saffron.
