Fermentation takes place over 6-8 days, without exceeding a temperature between 26/28°C. The wine macerates in contact with its skins for a period of 5-10 days. Subsequently, the wine undergoes an innovative dealcoholisation process that allows the
wine's organoleptic properties to be preserved.

Concentrated, warming aromas and flavours of blackberries, blueberries and bitter cherry on the nose with a secondary layer of meatiness and stewed fruit. Earthy and minerally on the finish. This is the perfect treat for Sunday roast lunch.

South Africa's answer to Chablis! Soils rich in limestone and broken mountain rock on De Wetshof’s site-specific vineyards allow this wine to emit optimum varietal expression. An unwooded wine, Bon Vallon has a brisk and clean freshness leading into a wide spectrum of classic flavours including citrus, wild flowers and grilled nuts, with a nuanced minerality on the aftertaste.

What an amazing wine!

Wonderfully rich and fleshy Chenin from hand harvested bush vine grown grapes in Paarl. Wild Yeast fermented and zero intervention this wine develops in the glass. We suggest not to over chill this wine and, if you can resist finishing the bottle, definitely give this a try on the second day of opening for an ethereal experience!
