Having left Formula One, to set up an engineering consultancy, the search for the perfect vineyard site began. The search was a lengthy and dedicated one - as the ideal combination of soils, aspect, slope, altitude and microclimate was difficult to find. After two years he found the site at Herstmonceux, East Sussex. The vineyard was planted in May 2007, with the winery following in 2009.

The Stanford vineyard is close to the southernmost tip of Africa and is located in one of South Africa’s coolest wine producing regions. The maritime vineyard enjoys a long ripening season, because of the strong cooling winds that are prevalent in the summer. This microclimate is ideal for creating a long hang time, concentrating the flavours in the berries, while retaining natural acidity levels. Elgin is situated at 400
metres above sea level and ripens even later then the coastal vineyard. The vines
here, planted in shale and clay soils, produce fleshier fruit, adding weight to the final
blend.

Barbaresco Tenuta Roncaglie is made from Nebbiolo grapes cultivated in Poderi Colla's vineyards in the Roncaglie area. As early as 1880, Roncaglie was already recognised as one of the best and most important areas for Barbaresco production, and mentioned in Lorenzo Fantini's important publication on Viticulture and Oenology in the Province of Cuneo. Several years on Daniel Thomasas, in the January 2005 issue of Wine Spectator, wrote: 'Roncaglie is acknowledged to be one of the best crus in the whole of Barbaresco.' The Poderi Colla vineyards have a southerly exposure and is situated at between 240 and 280 metres above sea level. Some of the vines were planted in 1970, some in 1980 and some in 1995. Vine density is around 4,000 to 5,000 plants per hectare and the average yield is 4,000 litres per hectare. Harvesting is usually done between 5th to 15th October. The Nebbiolo grapes (Lampia and Michet subvarieties) are destalked and pressed and the must is macerated on the skins for around 12 to 15 days at 30 degrees Centigrade. This if followed by a malolactic fermentation which is completed before the winter. The wine is transferred to some Slovinian and some French oak casks (partly new) and left to mature for 12 to 14 months. After maturation with wine is racked to stainless steel vats and clarified with egg whites before bottling.

In early 1997, Andrew Gunn, an engineer by training was contemplating his next career move. Having always loved the outdoors, the prospect of farming appealed to him and feeling young and energetic enough to start a new career, left the hustle and bustle of Johannesburg to begin the search for the ‘perfect’ farm.
After months of searching and 40 farm visits later, Andrew and a very tired estate agent stumbled upon a solitary run down apple farm on a mountain top overlooking the Atlantic Ocean. The prospect of a suitable farm in Elgin intrigued Andrew and on driving through the valley, he became excited by the beauty of the area. Surrounded by the Kogelberg Biosphere and Forestry the property had no agricultural neighbours. The rolling hills and the drive up the mountain to where the farm was situated, 420 meters above sea level, overlooking the Atlantic Ocean, was unlike anything he had ever seen. It was love at first sight.
As he drove in and stopped in front of a rather run down Herbert Baker homestead, he felt, “this is where I would like to live”, and the view from the front of the house overlooking the Elgin Valley below, made up his mind.
