Traditional long cuvaison using only wild 'natural' yeasts and remontages to release all the potential of the grapes and their skins. 24 months in French oak 228 litre barrels and one quarter in 600 litre demimuids, one third new, one third of second fill and one third of 3rd and 4th fill.
