In the vineyard: The grapes are sourced from 10-15 year old vines in the Murgia zone of central Puglia. The vineyards here, between 450 and 500m altitude, are known for producing excellent whites - the sand and limestone soil is well suited to the production of fresh, aromatic wines.
In the winery: 30% of the blend is given 6 hours cold maceration on skins. The wines are fermented at 18C for 2 to 3 weeks using local yeast cultures. Storage on fine lees for 3 months before bottling.
